Hominy Hoedown Salad
|Canned hominy||15 Ounce, drained, rinsed (1 Can)|
|Canned black beans||15 Ounce, rinsed and drained (1 Can)|
|Shredded red cabbage||1 Cup (16 tbs)|
|Reduced calorie italian salad dressing||1 Cup (16 tbs)|
|Serrano pepper/Jalapeno pepper||1 (Fresh)|
|Roasted red sweet peppers||1⁄3 Cup (5.33 tbs), thinly sliced|
1. In separate small mixing bowls place the hominy, black beans, and cabbage with 1/3 cup of the Italian dressing for each. Toss each mixture gently to coat; cover and refrigerate till thoroughly chilled. Remove stem and seeds from serrano or jalapeno pepper and cut into thin strips.
2. Arrange hominy, beans, and cabbage in three strips on salad plates. Garnish with roasted sweet peppers, and arrange serrano or jalapeno strips on top.
