Chow Chow Chicken Or Turkey Salad
|Cold diced cooked chicken/Turkey meat (preferably white meat)||1 3⁄4 Cup (28 tbs)|
|Finely chopped celery||1 Cup (16 tbs)|
|Chopped mustard pickle||1⁄3 Cup (5.33 tbs)|
|Pimiento||1 , drained and minced|
|Coarsely chopped blanched almonds||1⁄4 Cup (4 tbs)|
|Grated yellow onion||1 Teaspoon|
|White pepper||1⁄8 Teaspoon|
|French dressing||1⁄4 Cup (4 tbs)|
|Mayonnaise||1⁄3 Cup (5.33 tbs)|
Mix together all ingredients, cover and chill 2-3 hours to blend flavor Serve as is or in lettuce cups, hollowed-out tomatoes, or avocado halves.
For a touch of the exotic, serve in mango or small papaya halves.
