Golden Glow Salad
|Lemon jello||3 Ounce (1 Package)|
|Pineapple juice||1 Cup (16 tbs)|
|Diced pineapple||1 Cup (16 tbs), drained|
|Grated raw carrots||1⁄2 Cup (8 tbs)|
|Finely chopped celery||1⁄2 Cup (8 tbs)|
Dissolve jello in 1 cup boiling water.
Add pineapple juice, vinegar and salt.
Chill until syrupy and fold in pineapple, carrots and celery.
Chill in large mold or individual molds.
Serve on lettuce leaf topped with mayonnaise.
Serves 6 to 8.
Men always like this salad.
