Rice And Black Eyed Pea Salad
|Hot boiled rice||1 Quart|
|Frozen black eyed peas||10 Ounce, cooked and drained by package directions (1 Package)|
|Yellow onion||1 Medium, peeled and minced|
|Garlic||1 Clove (5 gm), peeled and crushed|
|Carrot||1 Large, peeled and coarsely grated|
|Minced parsley||1⁄4 Cup (4 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Black pepper/Cayenne pepper||1⁄8 Teaspoon|
|Olive oil||4 Tablespoon|
Mix all ingredients together, adding just enough oil to coat all lightly.
Serve warm or at room temperature as a main dish salad.
Good mounded in hollowed-out tomatoes.
