Rice And Black Eyed Pea Salad

Ingredients
  Hot boiled rice 1 Quart
  Frozen black eyed peas 10 Ounce, cooked and drained by package directions (1 Package)
  Yellow onion 1 Medium, peeled and minced
  Garlic 1 Clove (5 gm), peeled and crushed
  Carrot 1 Large, peeled and coarsely grated
  Minced parsley 1⁄4 Cup (4 tbs)
  Salt 1 1⁄2 Teaspoon
  Black pepper/Cayenne pepper 1⁄8 Teaspoon
  Olive oil 4 Tablespoon
Directions

Mix all ingredients together, adding just enough oil to coat all lightly.
Serve warm or at room temperature as a main dish salad.
Good mounded in hollowed-out tomatoes.
