ARTICHOKE SALAD

Ingredients
  Artichokes 1⁄2 Pound (Canned / Frozen)
  Japanese lettuce 4 Ounce
For vinaigrette
  Piccalilli 1⁄4 Cup (4 tbs)
  Pimiento strips 4
  Caper 4
  Chives 1 Tablespoon
  Oil 2 Teaspoon
  Vinegar 2 Teaspoon
Directions

Place cold hearts of artichoke, canned or frozen, on a bed of Japanese lettuce.
Then prepare a vinaigrette dressing of piccalilli, pimiento strips, capers, chives and a little oil and vinegar and pour over.
