CELERIAC ORANGE SALAD

Ingredients
  Celeriac roots 2 Large
  Lemons juice 2 Tablespoon
  Salt 1 Tablespoon
  Oranges 3
  Broken walnuts 1⁄2 Cup (8 tbs)
  French dressing 1⁄2 Cup (8 tbs)
  Sugar 1 Teaspoon
  Poppy seeds 1 Teaspoon
Directions

Cut celeriac into match-like strips after peeling.
Cover with cold water and allow to stand.
In a large saucepan put 1 quart boiling water, add lemon juice, salt, celeriac and bring to the boil and cook 4 minutes or until just tender.
Drain, cool.
When quite cold add orange slices, nuts and dressing.
Toss, chill and serve.
