Garlic Salad Nicoise
|Garlic||1 Clove (5 gm), peeled and halved|
|Boston lettuce head||1 , trimmed, broken in bite-size pieces, and chilled|
|French dressing||1⁄2 Cup (8 tbs)|
|Diced cooked potatoes||2 Cup (32 tbs) (Use Cold)|
|Cooked cut green beans||2 Cup (32 tbs) (Use Cold)|
|Ripe olives||1⁄2 Cup (8 tbs)|
|Tomatoes||2 , cored and cut in wedges|
|Rolled anchovies||2 Ounce, drained (1 Can)|
|Minced fresh chervil||1 Teaspoon|
|Minced fresh tarragon||1 Teaspoon|
Rub a salad bowl with garlic, add lettuce, 2-3 tablespoons dressing, and toss.
Mix 1/4 cup dressing with potatoes and beans, then pile on lettuce.
Garnish with olives, tomatoes, and anchovies, sprinkle with capers, herbs, and remaining salad dressing.
Do not toss.
