Durkee'S Chicken Salad With Peanuts And Olives
|Hen||6 Pound (1 Bird)|
|Black pepper||To Taste|
|Red pepper||To Taste|
|Hard-cooked eggs||8 , finely chopped|
|Stalk celery||1 , chopped fine (Use Whole)|
|Salted peanuts||3 Ounce (3 Small Packages, 1 Ounce Each)|
|Canned green olives||7 Ounce, chopped (1 Small Jar)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Dressing||1⁄2 Cup (8 tbs) (Durkees Brand)|
|Worcestershire sauce||1 1⁄2 Teaspoon|
|Lemon juice||1 Tablespoon (Extracted From 1 Lemon)|
Boil hen with seasonings until tender.
Cool and remove chicken from bone.
Dice chicken very fine.
Add chopped eggs, celery, olives and peanuts.
Fold in mayonnaise, Durkee's dressing and add Worcestershire sauce and lemon juice.
May be used for fresh stuffed tomatoes.
