Taffy Apple Salad
|Chopped red delicious apples||4 Cup (64 tbs), unpeeled|
|Canned crushed pineapple||8 Ounce, drained, juice reserved|
|Salted peanuts||1 Cup (16 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Cider vinegar||2 Tablespoon|
|Egg||1 , beaten|
|Cool whip||8 Ounce, thawed (1 Container)|
Place apples, drained pineapple and nuts in bowl; mix.
Combine cornstarch, sugar, vinegar and reserved pineapple juice.
Cook, over low heat for 1 minute, then add beaten egg.
Cook until thick.
When above mixture is cool, stir in apple mixture and mix well.
Fold in the Cool Whip.
Refrigerate overnight, or at least 6 hours.
This reminds you of eating taffy apples.
