Mandarin Lettuce Salad
|Sliced almonds||1⁄4 Cup (4 tbs)|
|Head of lettuce||1⁄2|
|Canned mandarin oranges||11 Ounce (1 Can)|
|Green onions||2 , thinly sliced|
|Sugar||7 Teaspoon (2 Tablespoons Plus 1 Teaspoon)|
|Chopped celery||1 Cup (16 tbs)|
Cook almonds and sugar over low heat until sugar is dissolved, stirring constantly.
When almonds are coated remove fromTieat.
Cool and break apart.
Keep at room temperature.
Place lettuce, which is broken into bite-size pieces, celery and onions in a bowl.
Pour the following dressing over this just before serving and toss.
When serving individually orin alarge bowl, sprinkle the caramelized almonds over top.
