Slow Cooked Celery
|Lemon juice||1 Tablespoon|
|White stock||1⁄2 Pint|
1) Grease a casserole.
2) Trim the celery hearts and cut into 1" lengths.
3) Arrange in the casserole.
4) Dot with butter and drizzle with lemon juice and the seasoning.
5) Pour over the stock and cover first with a greaseproof lid, and then with the casserole lid.
6) Place in a slow oven and cook for about 2 hrs, till tender.
7) Remove the lid after 1 hour.
8) Serve garnished with parsley and the drippings.
