Apple Salad

Ingredients
  Raisins 3 Tablespoon
  Currants 3 Tablespoon
  Clear honey 5 Tablespoon
  Lemon 1 , juiced
  Sugar 3 Tablespoon
  Dessert apples 2 Large
  Pear 1 Large
  Apricots 8
Directions

Cover the raisins and currants with boiling water and leave for 5 minutes.
Warm the honey in a saucepan until it is very liquid.
Drain the raisins and currants and add to the honey with the lemon juice and sugar.
Remove from the heat.
Peel and quarter the apples and pear.
Remove the cores and cut the fruit into thin slices.
Halve the apricots, remove the cores and cut into quarters.
Add the fruit to the honey mixture and stir well.
Spoon into a serving dish.
Cool, then chill for 30 minutes before serving.
