Anchovy Cauliflower Salad

Ingredients
  Cauliflower heads 2 , broken into florets
  Chopped parsley 1 Cup (16 tbs)
  Chopped garlic 2 Clove (10 gm)
  Capers 2 Tablespoon
  Anchovies 1 Can (10 oz)
  Lemon juice 1⁄2 Cup (8 tbs)
  Olive oil 3⁄4 Cup (12 tbs)
  Orange zest 1 Teaspoon
Directions

GETTING READY
1) In a salad bowl, combine cauliflower, parsley and capers, all together.

MAKING
2) In a small bowl, combine anchovies, garlic, lemon juice, orange zest and olive oil.
3) Pour this over the cauliflower and toss well.

SERVING
4) Sprinkle fresh orange zest on top to serve.
