Ingredients
  Cucumbers 2 Medium
  Salt 1 Tablespoon
  Oil 1⁄2 Tablespoon
  Lemon juice 2 Tablespoon
  Dijon mustard 2 Tablespoon
  Pepper To Taste
Directions

Peel cucumbers and remove seeds.
Slice, sprinkle with salt and let stand in a strainer or colander for 1/2 hour.
Rinse and pat dry.
Combine oil, lemon juice, mustard and pepper.
Pour over cucumbers.
Serve.
