Chicken Fruit Salad
|Cooked cubed chicken||3 Cup (48 tbs)|
|Celery||3⁄4 Cup (12 tbs), chopped|
|Red grapes||3⁄4 Cup (12 tbs), halved and seeded|
|Canned pineapple chunks||20 Ounce, drained (1 Can)|
|Canned mandarin oranges||11 Ounce, drained (1 Can)|
|Chopped pecans||1⁄4 Cup (4 tbs)|
|Salad oil||1⁄4 Cup (4 tbs)|
Lightly toss chicken, celery, grapes, pineapple, oranges and 3 tablespoons pecans.
Blend in salad oil and salt.
Serve on lettuce leaves.
Garnish with remaining pecans.
