Summer Potato Salad
|Potatoes||7 , cooked, cubed|
|Chopped onion||1 Tablespoon|
|Pickle relish||1⁄4 Cup (4 tbs)|
|French dressing||1⁄4 Cup (4 tbs)|
|Radishes||1 Cup (16 tbs), sliced|
|Celery||1 Cup (16 tbs), diced|
|Diced carrots||1⁄2 Cup (8 tbs)|
|Diced cucumbers||1⁄2 Cup (8 tbs)|
|Hard-cooked eggs||5 , sliced|
|Mayonnaise||1 Cup (16 tbs)|
Combine the onion, salt, pepper, pickle relish and French dressing with the potatoes.
Chill about 1 hour.
Fold in vegetables, eggs and mayonnaise for a real treat
