|Canned crushed pineapple||8 1⁄2 Ounce (1 Can)|
|Shredded carrots||1 1⁄2 Cup (24 tbs)|
|Flaked coconut||3⁄4 Cup (12 tbs)|
Drain pineapple, reserving 1/2 cup juice.
Combine pineapple, carrots, coconut,.and sugar.
Com bine mayonnaise and reserved pineapple juice; beat with wire whisk until smooth.
Pour over carrot mixture and mix well.
This is a "dressed up" version of the ever-popular carrot salad that usually has only raisins.
