High Raw Mexican Summer Salad

  Romaine lettuce 1⁄2 Bunch (50 gm)
  Spinach 1⁄2 Bunch (50 gm)
  Sprouts 1⁄2 Cup (8 tbs)
  Tomatoes 1 Small, chop
  Avacados 1 Medium
  Red pepper 1⁄2 Cup (8 tbs), chop
  Carrots 1⁄2 Cup (8 tbs), chop
  Corn 1⁄4 Cup (4 tbs)
  Jalapeno 1⁄4 Cup (4 tbs)
  Purple cabbage 1⁄2 Cup (8 tbs)
For the dressing
  Lime juice 1 Small
  Shallots 1 Medium, chop
  Onions 1⁄2 Small, chop
  Cilantro 4 Small
  Cold pressed olive oil 1⁄4 Cup (4 tbs)
  Taco seasoning 1⁄2 Tablespoon

1. Chop all the vegetables and mix them in a large salad bowl.
2. In a small bowl combine the lemon juice, shallots, small onion, cilantro, cold pressed olive oil and taco seasoning.
3. Toss the salad along with the dressing.

4. Serve the Raw Mexican Summer Salad with olives.
