High Raw Barley Salad

Ingredients
  Raw barley 100 Gram
  Wheat berries 100 Gram
  Dill 1⁄4 Cup (4 tbs), chopped finely
  Cilantro 1⁄4 Cup (4 tbs), chopped finely
  Mint 1⁄4 Cup (4 tbs), chopped finely
  Yellow pepper 1⁄2 Small, chopped finely
  Onion 1 Small, chopped finely
For the dressing
  Honey 1 Tablespoon
  Hemp oil 1 1⁄2 Tablespoon
  Pepper 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
Directions

GETTING READY
1. Soak the raw barley and wheat berries separately in water over night.
2. Drain and keep it aside.

MAKING
3. In a bowl mix the barley, wheat berries, dill, mint, cilantro, yellow pepper and onion, mix well.
4. For the dressing, in a small bowl mix honey, hemp oil, pepper and salt.

SERVING
5. Serve the raw barley salad along with the dressing on a bed of spinach and tomatoes.

Here is a wonderful “high raw” “whole foods” way of incorporating grains into your raw food diet! This barley salad is a completely raw grain one which makes a really healthy dinner. This is one of those “chunk-it-all-in” salads. This one has barley, wheat-berries, red onion, bell pepper and a sweet raw honey dressing! This is ideal for summer, gorgeous and totally fresh.
