Scampi Apple And Cheese Salad

Ingredients
  Ricotta/Cottage cheese 8 Ounce
  Chopped nuts 1⁄2 Cup (8 tbs), toasted
  Dessert apple 1 , cored, sliced and brushed with lemon juice
  Scampi/Prawns 16 (Fresh Or Frozen)
  Oil 3 Tablespoon
  Lemon juice 1 Tablespoon
  Avocado 1⁄2 , mashed
  Cream 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1) Roll the cheese into round ball shapes about the size of walnuts.
2) Next, roll the cheese balls on a layer of chopped nuts.
3) Chill them.
4) Take a 4 glass serving dishes and in each, put some shredded escarole, lettuce or endive.
5) Arrange on the top, the slices of apples, large shrimps (prawns) or scampi and cheese balls.
6) Mix together all the ingredients for the dressing.
7) Pour the dressing individually over the salads.

SERVING
8) Serve with chips.

TIPS
If cottage cheese is used, sieve it before rolling into balls.
