1. Chop all the vegetables.
2. Preheat oven at 180*C.
3. In a sauce pan, cook brown rice.
4. On a baking tray, place all the seeds and nuts and pop into the oven for 10 minutes.
5. In a bowl, combine brown rice, spring onion, red pepper and nuts and seeds.
6. For making the dressing - in a bowl, add all the ingredients and mix well.
7. Pour it on rice and mix well.
