Brown Rice Salad

Ingredients
  Brown rice 2 Cup (32 tbs)
  Spring onions 4 Large, chopped finely
  Red pepper 1 Large, sliced
  Pumpkin seeds 1⁄2 Cup (8 tbs)
  Sunflower seeds 100 Gram
  Peanuts 100 Gram
  Sultanas 150 Gram
  Sesame seeds 100 Gram
For dressing
  Garlic 2 Clove (10 gm), chopped / crushed
  Ginger 1 Teaspoon
  Lemon zest 1 Teaspoon
  Lemon juice 1⁄2 Cup (8 tbs)
  Soy sauce 110 Milliliter
  Extra virgin olive oil 110 Milliliter
Directions

GETTING READY
1. Chop all the vegetables.
2. Preheat oven at 180*C.

MAKING
3. In a sauce pan, cook brown rice.
4. On a baking tray, place all the seeds and nuts and pop into the oven for 10 minutes.
5. In a bowl, combine brown rice, spring onion, red pepper and nuts and seeds.
6. For making the dressing - in a bowl, add all the ingredients and mix well.
7. Pour it on rice and mix well.

SERVING
8. Serve it as an appetizer.
