Winter Kohlrabi and Cherry Salad
|Black currant vinegar||1 Tablespoon|
|Olive oil||1 1⁄2 Tablespoon|
|Fresh garlic||1 Teaspoon, minced|
|Dried parsley||1 Teaspoon|
|Dried crushed oregano||1 Teaspoon|
|Fresh ground black pepper||1⁄8 Teaspoon|
|Kohlrabi||2 Cup (32 tbs), thinly sliced (Any Color)|
|Celeriac/Celery||1 Cup (16 tbs), peeled and thinly sliced|
|Fresh lemon juice||1⁄2 Teaspoon|
|Dried cherries||1⁄3 Cup (5.33 tbs)|
|White onion||1⁄8 Cup (2 tbs), minced|
1. Prepare the dressing by whisking together the vinegar, olive oil, garlic, honey, parsley, oregano, pepper and salt.
2. In a large bowl mix the kohlrabi, celeriac or celery, lemon juice, dried cherries and onion.
3. Add the dressing to the vegetables and mix well. Serve.
