Winter Kohlrabi and Cherry Salad

For dressing
  Black currant vinegar 1 Tablespoon
  Olive oil 1 1⁄2 Tablespoon
  Fresh garlic 1 Teaspoon, minced
  Honey 1 Teaspoon
  Dried parsley 1 Teaspoon
  Dried crushed oregano 1 Teaspoon
  Fresh ground black pepper 1⁄8 Teaspoon
  Salt 1 Dash
For salad
  Kohlrabi 2 Cup (32 tbs), thinly sliced (Any Color)
  Celeriac/Celery 1 Cup (16 tbs), peeled and thinly sliced
  Fresh lemon juice 1⁄2 Teaspoon
  Dried cherries 1⁄3 Cup (5.33 tbs)
  White onion 1⁄8 Cup (2 tbs), minced

1. Prepare the dressing by whisking together the vinegar, olive oil, garlic, honey, parsley, oregano, pepper and salt.
2. In a large bowl mix the kohlrabi, celeriac or celery, lemon juice, dried cherries and onion.
3. Add the dressing to the vegetables and mix well. Serve.
