Summer Corn Salad is an essence of summer – sweet fresh corn and light flavors is a welcome alternative to corn on the cob. The vinegar brings out the sweetness in the corn without overpowering it and the red onion and peppers, gives it just enough kick. Ingredients
  Ears of corn 8
  Jalapeno 1 , chopped fine
  Red onion 1 , diced
  Yellow bell pepper 1 , diced
  Red bell pepper 1 , diced
  Chopped cilantro 1⁄4 Cup (4 tbs)
  Fresh lime juice 4 Tablespoon
  Rice vinegar 4 Tablespoon
  Olive oil 1⁄2 Cup (8 tbs)
  Sugar 1 Teaspoon
  Ground ginger root 2 Tablespoon, squeezed for its juice (Fresh)
  Chili garlic paste 1⁄4 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

1) Ears of corn stripped of the kernels and place in a bowl.
2) Add onions,peppers and cilantro
3) Wish the ingredients of the dressing together, and pour over the corn and the vegetables, season with salt and pepper.
