Classic Confetti Rice Salad

Ingredients
  Wild rice 1⁄2 Cup (8 tbs), rinsed
  Long grain white rice 1⁄2 Cup (8 tbs)
  Oranges 2 , segmented
  Chopped dates 2⁄3 Cup (10.67 tbs)
  Sliced scallions 1⁄2 Cup (8 tbs)
  Water 1⁄4 Cup (4 tbs)
  Apple juice concentrate 2 Tablespoon
  Lemon juice 1 Tablespoon
  Red wine vinegar 1 Tablespoon
  Dried basil 1⁄2 Teaspoon
  Dry mustard 1⁄4 Teaspoon
  Ground black pepper To Taste
  Salt To Taste
Directions

Using separate saucepans, cook the wild rice and the white rice according to the package directions.
Drain, if necessary.
Cool and transfer to a large bowl.
Stir in the oranges, dates, and scallions.
In a small bowl, whisk together the water, apple juice concentrate, lemon juice, vinegar, basil, and mustard.
Pour the dressing over the salad and toss to coat.
Season with the salt and pepper.
