|Water||1⁄4 Cup (4 tbs)|
|Olive oil||1⁄4 Cup (4 tbs)|
|White wine vinegar||2 Tablespoon|
|Pepper white||1 Teaspoon|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
In 2-quart casserole, combine zucchini and water.
Microwave at High for 6 to 8 minutes, or until zucchini is tender-crisp, stirring twice.
In 1-cup measure, blend olive oil, vinegar, salt, white pepper and sugar.
Pour oil and vinegar mixture over zucchini.
Chill for 4 to 5 hours, stirring occasionally.
