Green Papaya Salad
|Green papaya||500 Gram|
|French beans||100 Gram|
|Tomatoes||3 Medium, sliced|
|Grated carrot||1⁄2 Cup (8 tbs)|
|Green chilies||4 , seeded and minced|
|Minced garlic||1⁄2 Tablespoon|
|Grated lime rind||1 Teaspoon|
|Grated jaggery||1 Teaspoon|
|Peanuts||2 Tablespoon, roasted, skinned and crushed|
|Salt||1⁄4 Teaspoon (Up)|
|Lime juice||2 Tablespoon|
|Chopped coriander leaves||1 Tablespoon|
Remove and discard seeds.
Shred papaya flesh.
Wash French beans, string and trim ends and cut into half.
Blanch and drain thoroughly.
Combine all ingredients except lime juice and garnish in a salad bowl and mix well.
Just before serving, sprinkle in lime juice, garnish with coriander leaves and serve at room temperature.
