Green Papaya Salad

Ingredients
  Green papaya 500 Gram
  French beans 100 Gram
  Tomatoes 3 Medium, sliced
  Grated carrot 1⁄2 Cup (8 tbs)
  Green chilies 4 , seeded and minced
  Minced garlic 1⁄2 Tablespoon
  Grated lime rind 1 Teaspoon
  Grated jaggery 1 Teaspoon
  Peanuts 2 Tablespoon, roasted, skinned and crushed
  Salt 1⁄4 Teaspoon (Up)
  Lime juice 2 Tablespoon
  Chopped coriander leaves 1 Tablespoon
Directions

Peel papaya.
Remove and discard seeds.
Shred papaya flesh.
Wash French beans, string and trim ends and cut into half.
Blanch and drain thoroughly.
Combine all ingredients except lime juice and garnish in a salad bowl and mix well.
Just before serving, sprinkle in lime juice, garnish with coriander leaves and serve at room temperature.
