Bibb And Cucumber Salad

Ingredients
  White wine vinegar 3 Tablespoon
  Dijon mustard 2 Teaspoon
  Dried tarragon 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Pepper 1 Pinch
  Vegetable oil 1⁄3 Cup (5.33 tbs)
  Cucumber 1 Large
  Torn bibb lettuce/Boston lettuce 14 Cup (224 tbs) (3 Heads)
  Green onions 6 , chopped
  Chopped fresh parsley 1 Tablespoon
Directions

In bowl, whisk together vinegar, mustard, tarragon, salt and pepper; gradually whisk in oil.
Cut cucumber in half lengthwise; slice thinly to make 3 cups (750 mL).
Place in salad bowl along with lettuce and onions; toss with dressing.
Sprinkle with parsley.
