Apple And Turkey Ham Salad

Ingredients
  Crisp tart apples 1 Medium (Or Firm)
  Boiling potatoes 8 Ounce, cooked, cooled, and peeled (2 In Number)
  Monterey jack cheese/Hot pepper cheese 2 Ounce (1 Piece)
  Turkey ham slices 2 Ounce (95% Fat Free)
For creamy mustard dressing
  Reduced-calorie mayonnaise 1⁄4 Cup (4 tbs)
  White wine vinegar 4 1⁄2 Teaspoon
  Dijon-style mustard 1⁄4 Teaspoon
  Green onion 1 Medium, coarsely chopped (Use Both White And Green Parts)
  Salt 1⁄8 Teaspoon
  Pepper 1⁄8 Teaspoon
  Romaine lettuce head 1⁄2 , shredded
Directions

1. Halve and core the apple; leave the skin on. Cut the apple into 1/2-inch-thick slices; cut the slices into matchsticks, 1 inch long. Do the same with the potatoes and the cheese. Slice the turkey-ham into 1 x 1/2-inch strips. Combine the apple, potatoes, cheese and turkey-ham all in a large bowl.
2. Prepare the Creamy Mustard Dressing: Combine the mayonnaise, vinegar, mustard, green onion, salt and pepper in the container of a food processor. Cover; whirl until the onion is finely chopped and the mixture is well blended.
3. Add the dressing to the salad ingredients in the large bowl; toss gently to coat all the salad ingredients well.
4. Arrange the shredded lettuce on a serving plate. Mound the salad on top.
