Old Timer Perfection Salad
|Lemon flavored gelatin||3 Ounce (1 Package)|
|Boiling water||1 Cup (16 tbs)|
|Cold water||3⁄4 Cup (12 tbs)|
|Shredded green cabbage||3⁄4 Cup (12 tbs)|
|Shredded raw carrots||3⁄4 Cup (12 tbs)|
|Diced green bell pepper||1⁄4 Cup (4 tbs)|
|Diced pimiento||2 Tablespoon|
|Chopped chives||1 Tablespoon|
|Buttermilk dressing/Mayonnaise with yogurt / sour cream||1⁄2 Cup (8 tbs)|
Dissolve gelatin in boiling water and blend in cold water, salt to taste, and vinegar.
Chill until syrupy thick.
Have ready shredded cabbage, carrots, bell pepper, pimiento and chives.
Fold into thickened gelatin and turn into an 8-inch square pan.
Cut into oblongs and serve on lettuce leaves.
Buttermilk Dressing lightly sweetened with honey is nice with this.
Another good dressing is mayonnaise mixed with an equal amount of yogurt or sour cream and lightly sweetened.
Vary with sliced stuffed olives in place of the green pepper and a little grated onion for the chives.
