Zucchini Celery And Apple Salad

Ingredients
  Zucchini 2 1⁄2 Pound, thinly sliced
  Celery stalks 10 , thinly sliced
  Green apples 4 Large, cored
  Plain yogurt 1 1⁄4 Cup (20 tbs)
  Lemon juice 3⁄4 Cup (12 tbs)
  Lemon rind 3 Tablespoon, finely grated
  Dijon mustard 1⁄2 Cup (8 tbs)
  Chopped thyme/1 1/2 tablespoons dried thyme 3 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Make the dressing by blending the yogurt, lemon juice and rind and mustard together.
Stir in the thyme and seasoning.
Cover and chill.
Toss the salad ingredients together.
Pour the dressing over and toss again lightly.
