Cottage Cheese And Fruit Salad

Ingredients
  Cottage cheese 13 Ounce (410 Gram)
  Grated orange rind 1⁄2 Teaspoon
  Orange 1 , segmented
  Pecan nuts 1 Ounce, halved and toasted (30 Gram)
  Mignonette lettuce 1 , separated into leaves
  Celery stick 1 , sliced
  Red skinned apple 1 , thinly sliced (Eating Apple)
For orange dressing
  Olive oil 4 Tablespoon
  Freshly squeezed orange juice 2 Tablespoon
  Red wine vinegar 1 Tablespoon
  Caster sugar 1⁄2 Teaspoon
  Chopped fresh basil 1 Teaspoon
  Chopped fresh tarragon 1 Teaspoon
Directions

1. Make orange dressing by mixing all ingredients in a screwtop jar. Close tightly; shake until well combined.
2. Combine cottage cheese, orange rind and half the orange segments in a bowl. Add pecan nuts and mix lightly.
3. Divide lettuce between serving plates. Top with cottage cheese mixture. Arrange remaining orange, celery and apple around salads. Drizzle with dressing.
