Cottage Cheese And Fruit Salad
|Cottage cheese||13 Ounce (410 Gram)|
|Grated orange rind||1⁄2 Teaspoon|
|Orange||1 , segmented|
|Pecan nuts||1 Ounce, halved and toasted (30 Gram)|
|Mignonette lettuce||1 , separated into leaves|
|Celery stick||1 , sliced|
|Red skinned apple||1 , thinly sliced (Eating Apple)|
|For orange dressing|
|Olive oil||4 Tablespoon|
|Freshly squeezed orange juice||2 Tablespoon|
|Red wine vinegar||1 Tablespoon|
|Caster sugar||1⁄2 Teaspoon|
|Chopped fresh basil||1 Teaspoon|
|Chopped fresh tarragon||1 Teaspoon|
1. Make orange dressing by mixing all ingredients in a screwtop jar. Close tightly; shake until well combined.
2. Combine cottage cheese, orange rind and half the orange segments in a bowl. Add pecan nuts and mix lightly.
3. Divide lettuce between serving plates. Top with cottage cheese mixture. Arrange remaining orange, celery and apple around salads. Drizzle with dressing.
