Quick Veg Salad
|Smoked sweet paprika||1⁄4 Teaspoon (For vinaigrette)|
|Honey||1 Teaspoon (For vinaigrette)|
|Torned sweet basil leaves||3 (For vinaigrette)|
|Heart of romaine||1 , rinsed and roughly chopped|
|Grape tomatoes/Cherry tomatoes||10|
|Cucumber||1⁄2 , thinly sliced|
|Chopped yellow onion/Chopped red onion||1⁄4 Cup (4 tbs)|
|Croutons||1⁄2 Cup (8 tbs) (of your choice)|
|White wine vinegar||1 Teaspoon (For vinaigrette)|
|Organic extra virgin olive oil||1 Tablespoon (For vinaigrette)|
|Garlic clove||1 Small, finely chopped (For vinaigrette)|
1)Prepare and mix the salad ingredients in a large bowl.
2)Blend together white wine vinegar, honey, paprika, salt & pepper and extra virgin olive oil for about a minute.
3)Mix in chopped garlic and torned basil. Let the vinaigrette sit for about 15-20 minutes.
4)When ready to enjoy the salad, pour the vinaigrette over the salad.
1)If you do not like biting into the bits of garlic then you can give it a whack with your knife and then add it to the vinaigrette. Do remember to take the garlic out before serving.
