Spiced Pear Salad
|Canned pear halves||6 (With 1/4 Cup Plus 2 Tablespoons Juice, No Sugar Added)|
|Sugarfree pear juice||6 Tablespoon|
|Red wine vinegar||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm)|
|Shredded lettuce||2 Cup (32 tbs)|
|Mayonnaise||6 Tablespoon (1/4 Cup Plus 2 Tablespoons, Imitation)|
Combine pear juice with vinegar, cinnamon stick, and clove in a medium saucepan.
Bring to a boil; cook until mixture is reduced to about 1/4 cup.
Place pear halves in a medium bowl.
Pour hot juice over pears and chill for several hours, turning fruit occasionally.
Drain pears; strain and reserve liquid.
Arrange pear halves on shredded lettuce.
Combine liquid with mayonnaise and serve over pears as a salad dressing.
