Fruit and Nut Salad
|Grapefruits||2 , peeled and sectioned|
|Oranges||2 , peeled and sectioned|
|Chopped fresh pineapple||1 Cup (16 tbs)|
|Green apple||1 Large, chopped|
|Lemon juice||1 Tablespoon|
|Stuffed olives||1⁄2 Cup (8 tbs)|
|Toasted almonds||1⁄4 Cup (4 tbs)|
|Chopped walnuts||1⁄4 Cup (4 tbs)|
|Olive oil||1 Tablespoon|
|White wine vinegar||2 Tablespoon|
|Freshly ground black pepper||1|
|Chopped chives||1 Tablespoon|
Mix together the grapefruit, oranges and pineapple in a bowl and chill.
Toss the apples in lemon juice to prevent browning and add to other fruit with the olives.
Wash the lettuce, place the leaves on a serving dish and spoon the fruit mixture on top.
Sprinkle with nuts.
Combine the oil, vinegar, pepper and chives and pour over the salad just before serving.
