Classic Macaroni Salad
|Elbow macaroni||6 Ounce|
|Sweet pickles||5 , chopped|
|Red bell pepper||1 , seeded and chopped|
|Green bell pepper||1 , seeded and chopped|
|Celery stalk||1 , chopped|
|Scallions||2 , chopped|
|Reduced fat mayonnaise||3⁄4 Cup (12 tbs)|
|Cider vinegar||2 Tablespoon|
|Dijon mustard||2 Tablespoon|
1. Cook the macaroni according to package directions. Drain and rinse with cold water; transfer to a large bowl. Add the pickles, red and green bell peppers, celery, and scallions.
2. In a small bowl, combine the mayonnaise, vinegar, and mustard. Pour over the macaroni mixture and toss well.
