Potato Salad With Egg And Shallots
|Egg||1 , hardboiled and chopped|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|White vinegar||2 Teaspoon|
|Green shallots||2 , chopped|
|Chopped fresh parsley||2 Teaspoon|
1.Peel potatoes, cut into cubes as large or as small as you like; keep them as even as possible.
2.Half-fill medium saucepan with hot water, cover, bring to boil, add potatoes, return to boil, reduce heat, simmer for about 5 minutes or until potatoes are just tender when pierced with skewer.
Pour into strainer carefully to prevent potatoes breaking, immediately spread on oven tray to cool.
If serving salad hot, transfer to large bowl and add the prepared mayonnaise mixture.
3.Combine egg, mayonnaise and vinegar in blender or processor, blend or process until smooth.
Combine potatoes, mayonnaise mixture, shallots and parsley in bowl, mix gently to coat potatoes evenly.
