Lima Bean & Corn Salad
|Frozen corn kernels||1 Cup (16 tbs)|
|Frozen baby lima beans||1 Cup (16 tbs)|
|Shredded cheddar cheese||1⁄2 Cup (8 tbs)|
|Chopped onion||2 Tablespoon|
|Eggless mayonnaise||3 Tablespoon|
|Prepared mustard||1 1⁄2 Teaspoon|
|Crisp salad greens||3|
|Chopped fresh parsley||2 Tablespoon|
Defrost and drain corn kernels. Simmer lima beans in a small amount of water for 10 to 15 minutes until just tender. Drain and cool.
In a bowl, combine drained and cooled limas, com, cheese, onion, eggless mayonnaise and mustard. Toss well.
Serve on a bed of salad greens. Garnish with fresh parsley and/or paprika.
