Ingredients
  Cubed apples 2 Cup (32 tbs), unpeeled
  Lemon juice 1 Tablespoon
  Cubed cooked chicken 2 Cup (32 tbs)
  Chopped celery 1 Cup (16 tbs)
  Chopped green onions 1⁄3 Cup (5.33 tbs)
  Chopped sweet red pepper 1⁄3 Cup (5.33 tbs)
  Roasted unsalted peanuts 1⁄3 Cup (5.33 tbs)
  Light mayonnaise 1⁄3 Cup (5.33 tbs)
  Plain low fat yogurt 1⁄3 Cup (5.33 tbs)
  Light sour cream 1⁄4 Cup (4 tbs)
  Sweet mustard 2 Teaspoon
  Lettuce leaves 8
Directions

In bowl, toss apples with lemon juice; add chicken, celery, onions, red pepper and peanuts.
Stir together mayonnaise, yogurt, sour cream and mustard; stir into chicken mixture.
Season with salt and pepper to taste.
