Red Potato Salad
|Hot potatoes||2 Cup (32 tbs), diced (small ones)|
|Dairy sour cream||3⁄4 Cup (12 tbs)|
|Cooked beets||1 Cup (16 tbs), diced (small ones)|
|Hard cooked eggs||2 , chopped coarsely|
|Crisp bacon strip||3|
Mix the sour cream with the vinegar, salt, and pepper.
Combine the sour cream mixture with the remaining ingredients, adding the crumbled bacon at the last minute.
Serve slightly warm.
