Tarragon Chicken Salad In Lettuce Cups

Ingredients
  Chopped cooked chicken 2 Cup (32 tbs)
  Homemade mayonnaise 3 Tablespoon
  Celery stalks 3 , finely chopped
  Sweet onion 1⁄4 , finely chopped (Maui or Vidalia)
  Red bell pepper 1⁄2 , finely chopped
  Chopped fresh tarragon/1/2 teaspoon dried 2 Tablespoon
  Salt To Taste
  Freshly ground black pepper To Taste
  Romaine lettuce leaves 6
  Green onions 3 , chopped
  Tarragon sprig 3 (for garnish)
Directions

Place all ingredients for chicken salad in a bowl and mix until well combined.
Adjust seasonings.
Place a large dollop of chicken salad in each lettuce leaf.
Garnish with green onions and tarragon.
Then fold it up like a taco and enjoy.
