Quick Marinated Black Bean Salad

Ingredients
  Dried black beans 1 Pound
  Cooked brown rice 3 Cup (48 tbs)
  Onion 1 Cup (16 tbs), chopped
  Green bell pepper 1 Cup (16 tbs), chopped
  Fresh cilantro/Parsley 1⁄4 Cup (4 tbs), chopped
  Corn oil/Safflower oil 3 Tablespoon
  Red wine vinegar 3 Tablespoon
  Vegetable broth/Chicken broth 3 Tablespoon (homemade or canned)
  Fresh thyme/1 teaspoon dried thyme 2 Teaspoon
  Garlic 2 Clove (10 gm), minced
  Pepper 1⁄2 Teaspoon
Directions

Cook beans according to package directions; drain well.
In a large bowl place beans, rice, onion and green pepper.
In a small bowl place cilantro, oil, vinegar, broth, thyme, garlic and pepper; mix well.
Add to bean mixture; toss gently.
Marinate in refrigerator for several hours.
