Quick Marinated Black Bean Salad
|Dried black beans||1 Pound|
|Cooked brown rice||3 Cup (48 tbs)|
|Onion||1 Cup (16 tbs), chopped|
|Green bell pepper||1 Cup (16 tbs), chopped|
|Fresh cilantro/Parsley||1⁄4 Cup (4 tbs), chopped|
|Corn oil/Safflower oil||3 Tablespoon|
|Red wine vinegar||3 Tablespoon|
|Vegetable broth/Chicken broth||3 Tablespoon (homemade or canned)|
|Fresh thyme/1 teaspoon dried thyme||2 Teaspoon|
|Garlic||2 Clove (10 gm), minced|
Cook beans according to package directions; drain well.
In a large bowl place beans, rice, onion and green pepper.
In a small bowl place cilantro, oil, vinegar, broth, thyme, garlic and pepper; mix well.
Add to bean mixture; toss gently.
Marinate in refrigerator for several hours.
