Summer Fruit Salad With Mozzarella Cheese
|Honeydew melon||1 1⁄2 Cup (24 tbs), diced|
|Cantaloupe||1 1⁄2 Cup (24 tbs), diced|
|Fresh peaches||1 Cup (16 tbs), sliced|
|Seedless grapes||1 Cup (16 tbs)|
|Pitted dates||1 Cup (16 tbs), chopped|
|Part skim mozzarella cheese||3⁄4 Cup (12 tbs)|
|Almonds||1⁄2 Cup (8 tbs), chopped|
|Honey||1⁄3 Cup (5.33 tbs)|
|Frozen limeade concentrate||1⁄3 Cup (5.33 tbs), thawed|
|Corn oil/Safflower oil||1 Tablespoon|
|Bananas||2 Medium, chopped|
|Romaine lettuce leaves/Other lettuce leaves||6|
|Fresh strawberries||1⁄4 Cup (4 tbs)|
In a large bowl combine melons, peaches, grapes, dates, cheese and almonds; toss lightly.
In a mixer bowl combine honey, limeade concentrate and oil.
Beat until whipped.
Add with bananas to fruit mixture; toss lightly.
In a salad bowl arrange lining of romaine leaves.
Spoon salad into the prepared bowl.
Garnish with strawberries.
