Summer Fruit Salad With Mozzarella Cheese

  Honeydew melon 1 1⁄2 Cup (24 tbs), diced
  Cantaloupe 1 1⁄2 Cup (24 tbs), diced
  Fresh peaches 1 Cup (16 tbs), sliced
  Seedless grapes 1 Cup (16 tbs)
  Pitted dates 1 Cup (16 tbs), chopped
  Part skim mozzarella cheese 3⁄4 Cup (12 tbs)
  Almonds 1⁄2 Cup (8 tbs), chopped
  Honey 1⁄3 Cup (5.33 tbs)
  Frozen limeade concentrate 1⁄3 Cup (5.33 tbs), thawed
  Corn oil/Safflower oil 1 Tablespoon
  Bananas 2 Medium, chopped
  Romaine lettuce leaves/Other lettuce leaves 6
  Fresh strawberries 1⁄4 Cup (4 tbs)

In a large bowl combine melons, peaches, grapes, dates, cheese and almonds; toss lightly.
In a mixer bowl combine honey, limeade concentrate and oil.
Beat until whipped.
Add with bananas to fruit mixture; toss lightly.
In a salad bowl arrange lining of romaine leaves.
Spoon salad into the prepared bowl.
Garnish with strawberries.
