Lemon Broccoli Salad

Ingredients
  Fresh broccoli 2 Pound
  Broth 3 Tablespoon (Canned / Homemade, Vegetable / Chicken)
  Fresh lemon juice 3 Tablespoon
  Olive oil 1 1⁄2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

Separate broccoli into florets, peel stems and slice crosswise.
In a covered saucepan over medium heat steam broccoli in a small amount of water for 5 minutes or until tender-crisp.
Drain, reserving liquid for soup.
Into a bowl of ice water plunge broccoli immediately to stop cooking process.
Drain.
In a blender container combine broth, lemon juice, olive oil, salt and pepper.
Process until mixed.
In a salad bowl place broccoli.
Add dressing; toss to coat.
Marinate in refrigerator for several hours.
