|Olive oil||6 Tablespoon|
|Squid||1 , cleaned and cut into rings / strips|
|Cod fillets/Other white fish||1 , cooked and cut into pieces|
|Prawns||26 , cooked, shelled|
|Cockles/Scallops / winkles / any other shellfish||1⁄2 Pound|
|Lemon juice||2 Tablespoon|
|Freshly ground black pepper||To Taste|
|Freshly chopped parsley||1 Teaspoon|
|Lemon wedges||4 (For Garnish)|
Heat one-third of olive oil in a large frying pan, and add scrubbed and dried mussels or clams or other shellfish.
Cover and cook until shells open.
Discard any that do not.
Transfer to a bowl, and allow to cool.
In same pan, cook the squid for 20 min., or until tender.
Remove, and allow to cool.
Combine mussels, squid, fish, prawns, and other shellfish on a large serving platter.
Mix olive oil with lemon juice; season, and dress seafood.
Garnish with chopped parsley and lemon wedges, and chill before serving.
