Seafood Salad

Ingredients
  Mussels/Clams 24
  Olive oil 6 Tablespoon
  Squid 1 , cleaned and cut into rings / strips
  Cod fillets/Other white fish 1 , cooked and cut into pieces
  Prawns 26 , cooked, shelled
  Cockles/Scallops / winkles / any other shellfish 1⁄2 Pound
  Lemon juice 2 Tablespoon
  Salt To Taste
  Freshly ground black pepper To Taste
  Freshly chopped parsley 1 Teaspoon
  Lemon wedges 4 (For Garnish)
Directions

Heat one-third of olive oil in a large frying pan, and add scrubbed and dried mussels or clams or other shellfish.
Cover and cook until shells open.
Discard any that do not.
Transfer to a bowl, and allow to cool.
In same pan, cook the squid for 20 min., or until tender.
Remove, and allow to cool.
Combine mussels, squid, fish, prawns, and other shellfish on a large serving platter.
Mix olive oil with lemon juice; season, and dress seafood.
Garnish with chopped parsley and lemon wedges, and chill before serving.
