Crab Papaya Salad
|Crabmeat||1 Pound, drained|
|Chopped sweet red pepper||1⁄2 Cup (8 tbs)|
|Reduced fat mayonnaise||1⁄3 Cup (5.33 tbs)|
|Chopped green onions||1⁄4 Cup (4 tbs)|
|Mango chutney||1⁄4 Cup (4 tbs)|
|Horseradish mustard||1 1⁄2 Tablespoon|
|Ground pepper||1⁄4 Teaspoon|
|Papayas||3 Small, peeled, cut in half lengthwise, and seeded|
|Green leaf lettuce||4|
Combine first 7 ingredients in a small bowl, stirring well.
Cover and chill.
To serve, spoon 1/2 cup crab mixture into each papaya half.
Place papaya halves on individual lettuce-lined salad plates, if desired.
