Onion Celery Potato Salad

Ingredients
  Potatoes 1 Pound, boiled, peeled and diced
  Chopped onion 1⁄4 Cup (4 tbs)
  Celery 1⁄4 Cup (4 tbs), diced
  Cucumber 1⁄4 Cup (4 tbs), diced
  Hard cooked eggs 2 , chopped
  Vinegar/Lemon juice 1 Tablespoon
  Mayonnaise 1⁄2 Cup (8 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

1. Mix the vegetables and eggs.
2. Blend the vinegar or lemon juice into the mayonnaise. Mix with the salad. Cover. Chill.
3. Taste, add salt and pepper as needed.
