Herby Vegetable Salad

Ingredients
  Cauliflower 1⁄4 , broken into florets
  Broccoli head 1 , broken into florets
  Carrot 1 Large, cut into thin strips
  Snow peas 150 Gram, trimmed
  Red capsicum 1 , cut into thin strips
  Lemon juice 3 Tablespoon
  Finely chopped fresh coriander 2 Teaspoon
  Finely chopped fresh rosemary 2 Teaspoon
  Freshly ground black pepper 1
For lemon vinaigrette
  Lemon juice 2 Tablespoon
  Olive oil 1 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Whole grain mustard 1 Teaspoon
Directions

Boil, steam or microwave cauliflower, broccoli, carrot and snow peas until just tender.
Drain, refresh under cold water.

Drain vegetables well.
Toss in a salad bowl with capsicum, lemon juice, coriander and rosemary.
Season to taste with pepper.
Refrigerate until required.
3.
To make vinaigrette, combine all ingredients in a screwtop jar.
Shake well to combine.
Pour over salad just prior to serving.
