Salad Cream

Ingredients
  Butter 30 Gram
  Refined flour 15 Gram
  Salt 1⁄2 Teaspoon
  Pepper 1 Pinch
  Dry mustard 1 Teaspoon
  Sugar 1 Teaspoon
  Milk 150 Milliliter
  Egg yolks 2
  Vinegar 45 Milliliter (3 Tablespoon)
  Cream 10 Milliliter
  Cottage cheese 10 Gram
Directions

1. Melt butter. Stir in flour.
2. Add salt, pepper, mustard and sugar.
3. Stir in the milk and bring to boil stirring carefully.
4. Cool slightly.
5. Beat egg yolks. Add sauce gradually, stirring well.
6. Return to fire and cook slowly till sauce thickens.
7. Remove and add gradually the vinegar. Leave to cool.
8. To get extra creaming add cream or sieved cottage cheese or salad oil before serving.
