Artichoke Salad

Ingredients
  Artichoke hearts 1 Can (10 oz), marinated
  Red bell pepper 2 Tablespoon, chopped
  Red onion 1⁄4 Cup (4 tbs), sliced
  Mushroom caps 4 Ounce
  Greek olives 4 Ounce, pitted
  Pesto sauce 3 Tablespoon
  Heavy cream 1 Tablespoon
  Red wine vinegar 1 Tablespoon
  Feta cheese 2 Ounce, crumbled
  Salt To Taste
  Pepper To Taste
Directions

1. Mix pesto, cream and vinegar until smooth. Cut artichokes into bite sized pieces. Half mushrooms, if desired.
2. Mix all ingredients, except feta cheese, until well coated. Crumble in feta cheese and serve.
