Hot Rice Salad
|Cooked brown rice||1 Cup (16 tbs)|
|Onion||1 , chopped|
|Chopped snow peas||1⁄4 Cup (4 tbs)|
|Chopped red pepper||1⁄4 Cup (4 tbs)|
|Zucchini||1 , sliced|
|Spinach leaves||2 , finely chopped|
|Red pepper||1 , cut into strips (For Garnish)|
|Hard boiled eggs||2 , hardboiled|
|Freshly ground black pepper||To Taste|
|Sour cream||1⁄2 Cup (8 tbs)|
Keep the cooked rice hot in a colander over hot water.
Melt the butter in a frying pan and add the onion, snow peas, pepper and zucchini.
Cook for 5 minutes and mix with the hot rice.
Add the spinach to the rice.
To make the dressing, place the chopped eggs in a saucepan with the pepper, paprika and sour cream.
Heat but do not boil.
Place the salad in a serving bowl and pour over the sour cream dressing.
Garnish with strips of red pepper.
